HOW THE CHOCOLATE IS MADE

Hand-Made Everyday

All of our chocolates are made locally Up-Island in our small-batch kitchen. Learn more about the steps to create our unique treats below.

STEP ONE

Ingredient Prep

Our chocolate journey begins with the selection of top-quality ingredients. We source fresh, local ingredients like aromatic coffee beans from Chilmark Coffee and seasonal fruits and vibrant spices from neighboring Island farms to enhance and complement our chocolate. This ensures every batch and each chocolate is infused with our unique, local flavor profile.

STEP TWO

TEMPERING MACHINES

Tempering is essential for achieving chocolate’s smooth, glossy finish and satisfying snap. We precisely control the heating of melted chocolate to align the cocoa butter crystals into a stable structure that results in a perfectly tempered chocolate that is ready to be mixed with our prepared ingredients.

STEP THREE

DIPPED OR CUT

Once tempered, the chocolate is shaped into its final form. For dipped chocolate, we immerse ingredients like nuts, fruits, toffee, mints and caramels. We also use trays to create layered chocolate confections that are expertly cut into the perfect single bite treat with a variety of textures and taste profiles.

STEP FOUR

PACKAGED

We are continuously checking for quality throughout the chocolate-making process but after the chocolate has set and cooled, we inspect for one final round of checks to ensure the highest quality product. The chocolate is then individually placed in wrapping cups and boxed for your enjoyment.

READY FOR SALE
